I’m making this slice for a morning tea today so I’ve decided to post the recipe. It’s delicious, easy to make and one of those quick recipes that you can whip up with a few pantry staples that you tend to always have on hand. It doesn’t make a particularly big slice so you might need to double the quantities.

Ingredients

125g butter

125 brown sugar (you can get brown sugar here but you might need to hunt a little for it. I’ve seen it at Hipercor and it’s also available in the Asian delis)

125g chopped dates

125g flour

2 teaspoons baking powder

1 egg beaten

½ cup chopped nuts

½ teaspoon vanilla extract

Method

  1. Preheat oven to 180° C (I think that’s 356° F).
  1. Melt butter and sugar. Add dates, nuts, flour with baking powder and mix.
  1. Pour into a small Swiss roll tin and bake until golden.
