Greek Beef and Spinach – Recipe. By Kirsty Leggatt

Hi there,

I’ve decided this week to share a recipe that my Greek friend passed on to me. We travel to Greece quite a lot as part of my husband’s job and I must admit that I’ve never seen this dish on a menu there. Perhaps it’s one of those family recipes, cooked at home as a regular favourite but not quite sophisticated enough to find its way onto a restaurant menu. Whatever the reason, I love it as it’s simple, quick, healthy and delicious.

Ingredients

  • 500g minced beef (or lamb)
  • 200g spinach (or amount to your liking) washed and chopped. You can use frozen spinach, which makes this dish even quicker.
  • 1 onion chopped
  • 1 garlic clove crushed
  • 2 teaspoons dried oregano
  • 200g Feta crumbled
  • ½ cup of olives sliced (optional)
  • Lemon and Greek yogurt to serve

Method

Heat a large frying pan and add some olive oil. Sauté onion and garlic (adding a little salt to keep it from burning) until transparent than add meat and cook until completely brown. Add spinach, oregano and seasoning.

Simmer until spinach is wilted (approx. 5 minutes). Turn off the heat and add feta and olives if using. If you like, you can place fry pan under a hot grill for a couple of minutes until cheese is golden.

Serve with lemon wedges and natural Greek yogurt. I also serve it with rice and/or salad.

I won’t to take up food photography as a profession any time soon! But I’ve included a picture that I took last night when I cooked this.
